At Java Nation we pull all of our shots ristretto, which results in a more bold and full bodied shot with less overall bitterness that is common in a longer extraction. We regularly time our shots to accommodate for environmental factors like humidity to ensure consistent shot quality. And of course, our espresso is hand made, never by an automatic machine that can never match the quality of true barista craftsmanship.
